The article deals with economic aspects of introducing the new boiled sausages with replacement in recipes sodium nitrite into befunctional modules at the market. Canculations on the cost indexes of sausages, the efficiency of their production, marketing strategy options for indicators of price and quality of new products are presented in the article.
